Pizza Frittata

All the flavours of a pizza night, baked into a cheesy egg frittata and cut into wedges like slices.

Pizza Frittata

What you need

  • 200mlreconstituted Primasure 3+® drink
  • 8large eggs
  • 2medium white potatoes, thinly sliced
  • 1small onion, chopped
  • 1/4 tspsalt
  • 1 tbspolive oil
  • 1/2 cuppepperoni
  • 1/2red pepper, sliced
  • 1 cupsliced mushrooms
  • 100gtomato purée
  • 1/2 cuppart-skim mozzarella cheese, grated

*Only use the scoop provided in the Primasure 3+® tin.

How to make

  1. In a large pan, heat 1 tbsp olive oil over medium heat. Fry onions until just translucent, then add potatoes and continue frying until onions are golden and potatoes are tender but still firm. Add pepperoni, pepper and mushrooms and cook for 1–2 minutes. Stir in tomato purée until vegetables are coated.
  2. Meanwhile, whisk eggs and Primasure 3+® together. Pour the egg mixture into the pan and cook over low to medium heat until eggs are almost set but slightly moist on the surface, about 10 minutes. Lift the edges occasionally to let uncooked egg run to the bottom.
  3. Sprinkle with cheese and cover until melted — or place under the grill for 1–2 minutes if the pan is ovenproof. Cut into “pizza slices” and serve.
